Your Health IS Important for Your Business

I don’t know about you, but it’s been known that entrepreneurs are notorious for working long hours and have exhausting days. And those long days can easily take all the time and energy you have. But I feel it’s incredibly important to take time to workout, meditate and reset your mind each day. Pick one, but each day taking time to recenter yourself will only benefit your business in the long run. I totally get it’s hard to walk away from all the to-do’s of the business, especially if you’re balancing kids and family. However, in the long term, a healthy lifestyle can help with stress, fulfilment and help you feel your best!

One of my 2018 goals was to work to eat cleaner. Note, I didn’t say only clean eating, but after 6 months, I can tell you I feel the best ever, have lost a few pounds (without even trying) and am leaner.

One of my favorite meals is lettuce wraps, and even though on the surface, it may sound like a healthy meal, when you really look at what we put in there, it doesn’t always meet the clean eating goal. One of my recent recipes are these delicious clean chicken lettuce wraps.

I did modify this a bit because I didn’t want to use a crockpot (I still had to go to the store to get chicken…haha…working mom for ya!) What I did instead was boil the chicken and shredded it. I also didn’t add my chicken to the mix since my kids were going to try it and in the event they didn’t like it, we could quickly turn it into a taco.

I will say, the cilantro and lime make this dish. My husband liked it and I have had it for lunch twice now (I made a pretty big batch) and my son loves the sauce for tacos too. It could serve as a yummy, homemade salsa.

Ingredients:

  • 2 lbs. boneless and skinless chicken breasts
  • 1 cup diced tomatoes, fresh or canned organic, with juice
  • 1/2 cup broth (bone broth, chicken broth, or veggie broth)
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 3 fresh garlic cloves, minced
  • 1 chili pepper, minced, seeds removed
  • 1/2 cup fresh cilantro or parsley leaves, chopped
  • 1 Tbsp cumin
  • 1. 5 Tbsps jerk seasoning
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 ripe mango, sliced
  • 1 ripe avocado, sliced
  • Head of butter lettuce or lettuce leaves of choice

Crockpot Instructions:

  1. In a crockpot fitted with lid, arrange the ingredients as follows: chicken breasts, peppers, onion, garlic, cilantro, chili and diced tomatoes.
  2. Pour the broth and season with salt and pepper to your taste.
  3. Mix to combine, then place the lid on.
  4. Set crockpot to low and let cook about 6 hours (or high for 3-4 hours)
  5. When the chicken is done, shred with two forks and mix into the sauce.

Oven Instructions:

  1. Preheat the oven to 350 f.
  2. In a deep skillet fitted with tight lid, arrange the ingredients as follows: chicken breasts, peppers, onion, garlic, cilantro, chili and diced tomatoes.
  3. Pour the broth and season with salt and pepper to your taste.
  4. Mix to combine, then place the lid on.
  5. Bake in the preheated oven for about 40-45 minutes until chicken is cooked through.
  6. When the chicken is done, shred with two forks and mix into the sauce.
